Gone are the days of over cooked and mushy piles of soggy cauli- hello weirdly wonderful and delightfully delicious meals! Have you cottoned on to the versatility of cauliflower yet? We wrote about using it in place of bread when making pizza here in this post last week, and today we want to tell you about some more fantastic dishes to try. Cauliflower tortillas

Perfect for picnics and so moreish too- this little cauliflower tortillas are easy to make and a firm favourite here at Little Soap HQ. To make them you need:

  • One cauliflower, broken into pieces and chopped into a rice consistency using a food processor
  • Two eggs
  • Salt and pepper to season
  • one handful of fresh coriander
  • Squeeze of half a lemon
  • 1-2 tablespoons count flour if needed

To make the tortillas, simply place the cauliflower rice into a microwaveable bowl, cover and cook on high for three minutes. Remove from the bowl and pour into a clean tea towel or cheesecloth. Squeeze out the excess moisture (when the cauliflower is cool enough!) and pop back into the bowl. Then add the egg and seasonings plus any other ingredients you want- cheese, chilli, garlic etc. Experiment! Then mix in the egg, and if you feel the mixture needs to firm up a little, add some coconut flour until you have a dough like consistency. Then grab small handfuls, roll into balls then flatten onto a baking sheet, forming small round pancake shapes. Bake in the oven at 180 degrees on one side then the other, for about 10 minutes each. The tortillas then need to be popped into a dry frying pan to crisp up. And voila! Enjoy with your favourite topping, or just as they are. Delicious!

Cauliflower smoothie

Now hear us out! I can see you making faces, but honestly until you’ve tried it don’t knock it! The trick is to use frozen cauliflower and believe me it really transforms your smoothie- adding flavour, texture and valuable nutrients too. Try it! To make a super powered cauliflower smoothie you need:

  • Half a cup of frozen cauliflower
  • Half a cup of spinach
  • 75g frozen blueberries
  • One teaspoon cinnamon
  • Half a teaspoon powdered ginger
  • Few drops of vanilla essence
  • One banana
  • Water

Cauliflower crisps

We’ve all tried kale crisps, but have you tried cauliflower crisps yet? We highly recommend that you do! All you need is:

  • One cauliflower cut into bite size pieces
  • The juice of one lemon
  • One teaspoon of garlic salt
  • Salt and pepper to season
  • One tablespoon olive oil
  • One ziplock bag

To make the crisps, you need a low heat on the oven- 100 degrees is fine. Then simply add the cauliflower, lemon juice and olive oil to a zip lock bag and shake well. Then lay the pieces over a baking tray and sprinkle with the garlic salt and seasoning. The crisps need to be baked for about an hour, or until they’re crisp and golden. They’re worth the wait, believe me!
