Three Little Super Foods to Eat in June_LittleSoapCompany.co.ukIt’s June already! 2017 seems to be flying by doesn’t it? So what’s in the shopping basket this month? Well, because we’re that bit closer to summer now, the good news is that there is so much fresh produce out there for us right now. So much so, we found it hard to narrow down our list to just three! But here it is: three little super foods to eat in June. Enjoy!

Courgettes

We cannot get enough of the humble courgette right now, and no we’re not about to tell you how to make courgetti bolognese! We do love our spiraliser to bits! but there are so many ways to enjoy courgettes and here are three of our favourites:

Blueberry and courgette smoothie

Oh, yes! The breakfast smoothie just got even healthier. Because courgettes are so low in carbohydrates and high in fibre, they make a great ingredient at breakfast time, and if you don’t have time to fry up a courgette pancake (definitely worth a go at the weekend!) then why not try this instead? All you need is:

  • Half a courgette
  • Two handfuls of frozen blueberries
  • A handful of spinach
  • One or two pitted dates to sweeten
  • One tablespoon chia seeds
  • One teaspoon probiotic powder (optional)
  • One tablespoon almond butter
  • 250ml almond/ coconut milk/ water

Blend all ingredients and enjoy!

Courgette breakfast oats

Also know as ‘zoats’ (zucchini oats), this is one breakfast dish we implore you to try! Honestly, the thought of courgettes and oats Three Little Super Foods to Eat in June_LittleSoapCompany.co.ukdidn’t appeal to us either… until we tried them! Packed with nutrients and incredibly satisfying, this is one way to eat courgettes that will keep you going until lunchtime, that’s for sure! All you need is:

  • 1 small courgette
  • 250ml almond milk
  • 40g oats
  • Two tablespoons cocoa powder
  • Two tablespoons sweetener of your choice (honey is great)
  • One teaspoon mixed spice

To make it, pop the courgette and milk into a blender and blend until small. Then mix it with the oats with and cook over a medium heat until the liquid is absorbed and the oats expand. It should take around ten minutes. Add the cocoa, stir, then add sweetness. Voila!

Courgette hummus

Not for breakfast this one, unless you want to eat it first thing of course, we won’t stop you! Courgette hummus is so easy to make and great for last minute picnics this summer. All you need is:

  • One courgette, peeled and chopped
  • Half an avocado
  • Quarter of a cup of tahini
  • ¼ cup fresh lemon juice
  • Two tablespoons olive oil
  • A half inch piece of fresh ginger
  • Half a garlic clove
  • Half a teaspoon of salt

Place all ingredients into a blender and blend until smooth. That’s it!

Broad beans

Ah, good old broad beans! Packed full of nutrients – just don’t over boil them as they will turn to sludge! We love to eat them simply, with bacon, mint and garlic. But there are some really great recipes out there for broad beans that you just have to check out. Why not try this one:

Broad bean and feta toast

We love this combination so much! All you need is:

  • 350g broad beans
  • 100g feta cheese
  • Two table spoons of chopped mint leaves
  • One tablespoon of extra-virgin olive oil
  • 50g bag mixed salad leaf
  • 10 cherry tomatoes, halved
  • 1 tsp lemon juice
  • 4 thinly sliced baguettes

Three Little Super Foods to Eat in June_LittleSoapCompany.co.ukTo make the broad bean and feta toasts, simply cook the beans in a  pan of water for around 4 minutes, allowing the water to boil as it cooks. Then drain and run under cold water to cool. Press the beans out of their skins and transfer to a bowl. Crumble the feta cheese over the beans and add the mint. Season with black pepper and drizzle with the oil. Toss everything together then pile it onto your toast. Delicious! Serve with salad.

Strawberries

Yay! We love strawberry season so much! And we aren’t going to tell you what to do or how to eat them either, because here at Little Soap HQ we love them as they are. Rinsed, chopped and eaten. Yum!
