Spinach
Love it or hate it, there's no denying that spinach is a bit of a super food, and it's in season right now so it really should be on your shopping list! Buy organic if you can, and relish in the fact that helps to restore energy, increase vitality and improve the quality of the blood. Spinach is so rich in iron that it's often overlooked as a great source of vitamin K, vitamin A, vitamin C and folic acid as well as being a good source of manganese, magnesium, iron and vitamin B2 too.
So now you know how great it is, what can you do with it? Here are three recipes you're going to love:
Juice It!
Spinach is absolutely our favourite ingredient for juice! Just a handful will provide you with ammunition for the day ahead so it makes sense to us! Try these out for size:
Cool Mint
- Two stalks celery
 - Half a cucumber
 - Two handfuls spinach
 - Three cups mint leaves
 - One cup pineapple
 - Half a lemon
 
- Two stalks kale
 - One cup spinach
 - One pear
 - Half a lime
 - Three stalks of celery
 - Half a cucumber
 
- One cucumber
 - One cup parsley
 - One cup spinach
 - Two green apples
 
- Three cups watercress
 - One apple
 - One avocado
 - One Tbsp. apple cider vinegar
 - Oene Tbsp. maple syrup
 - One Tbsp. sweet mustard
 
- Half a cup fresh strawberries
 - Half a cup fresh mango
 - One raw beetroot, grated
 - One stalk of rhubarb, trimmed
 - Quarter of a cup plain yogurt
 
To make it, simply add all ingredients to a blender and combine on high for 1-2 minutes or until it becomes a smooth consistency. Apply to the face and neck and allow to soak in for 15-20 minutes.
Rinse off with lukewarm water and pat dry with a clean towel.
